Poultry Brine
Ingredients:
- 2 Quarts
“organic” chicken broth (but any broth should work)
- 2 cups
cane sugar (AKA: “raw sugar” or (“Turbinado”)
- 2 cups
brown sugar
- 1-to-1¼
cups kosher salt
- 1/3 cup
black peppercorn seeds (whole)
- 1 ½ cups
garlic cloves that I have processed into small chunks
- 8-to-12
bay leaves that I crush between my palms.
Directions:
Put all in
the pot, no special order, and heat just enough to dissolve sugar and salt. I
then just leave it on the burner and turn it off letting the residual heat meld
the ingredients. Let cool until the following day and then bottle.
I have been playing with adding MSG (Accent) and have not
settled on a specific amount yet.
